Baked Mushrooms Contra Costa

Great for parties, these always go fast. 2 Tablespoons of butter is overkill, try 2-3 teaspoons instead.

  • 12 mushrooms
  • Lemon juice
  • 2 Tablespoons butter
  • 2 Tablespoons grated Swiss cheese
  • 1/4 cup bread crumbs
  • 2 Tablespoons minced parsley
  • 1/2 clove garlic, minced
  • 1 Tablespoon minced onion
  • 2 to 4 Tablespoons California sherry
  • Salt and Pepper

Wash mushrooms, remove stems. Sprinkle a few drops lemon juice on each cap. Set aside.
Prepare stuffing.  Mince stems, sauté in the butter. Meanwhile combine cheese, bread crumbs, parsley, garlic, onion in a bowl, sprinkle with salt and pepper. Add sautéed mushroom stems, mix thoroughly. Add enough sherry to moisten mixture. Pile stuffing into mushroom caps.  Sprinkle with additional bread crumbs (optional).
Bake at 350 degrees for 15 minutes.
