Cherry Date Whole 30 Lara Bars

These bars saved my life! Inspired by bigsmanworld’s version, these were great stand ins for my addiction to chocolate during my 10 days of doing the Whole 30 diet. You can make a batch, cut up into bars and refrigerate to be on hand whenever a sweet craving hits.

The dates make these plenty sweet so make sure you get unsweetened dried cherries to stay Whole 30 compliant. I found mine at Trader Jo’s.


  • 1/2 cup almonds
  • 1/2 cup walnuts
  • 3/4 cup pitted and sliced dates
  • 1/4 cup raisins
  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup dried cherries
  • 2 T shredded carrot

2 bars has 137 calories and 3 grams of protein


This recipe works best with a food processor.

  1. Process nuts until crumbly
  2. Add dates, raisins, cherries and then process until there are only small pieces
  3. Add coconut and shredded carrots
  4. Add 1/8 teaspoon water (best to dribble in)
  5. Process until the mixture is in clumps
  6. Remove batter from processor bowl
  7. Press into a 8 by 8 glass pan
  8. Refrigerate for at least 2 hours
  9. Cut into bars and enjoy!

Ideally you want a glass pan to press the batter into, if you are using a metal pan you might want to use parchment paper.

I don’t have a 8 x 8 glass pan, but this glass divided casserole lid works great for me, I don’t mind that some of my bars have curved edges.
