Extraordinary Mushroom Spread


  • 4 large Portobello Mushrooms
  • 1 tablespoon unsalted vegan margarine
  • 4 garlic cloves, minced
  • 1/4 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper


  1.  Remove the stems from the mushrooms.
  2. Clean mushroom caps with a damp paper towel.
  3. Cut the caps into quarters.
  4. Place caps pieces in a food processor.
  5. Caps need to be ground to resemble bread crumbs.
  6. Place the margarine in a large skillet over medium heat.
  7. When margarine has melted place the garlic in the skillet.
  8. Cook about 1 minute being sure the garlic doesn’t start to turn brown.
  9. Add the thyme and the mushrooms.
  10. Cook 5 minutes being sure all the juice has evaporated.
  11. Add the salt and pepper and stir well to combine.
  12. Place spread in a bowl.
  13. Allow to come to room temperature before serving with crackers.
