Goto Cheap Vegan Pasta with Tempeh

Tempeh is not as well known as it’s cousin Tofu – but once you make its acquaintance you’ll wonder why Tempeh isn’t more popular.

My local Safeway does not carry Tempeh, so it’s once of those must buy items when I stop by a Trader Jo’s or Oakland’s version of a Whole Foods (without the “whole paycheck”), Farmer Jo’s.

Tempeh has a meatier texture than Tofu and it’s less processed. It comes in thin beige bricks that you can cube, crumble or slice lengthwise for frying.

My Goto Cheap Vegan Pasta with Tempeh

You ever noticed the price of that fancy spaghetti or red pasta sauce? It’s surprising. Here’s an alternative that is way cheaper.

Recipe:

1 can of diced tomatoes
1 can of tomato sauce
1 tsp oregano
1 leek
4-6 mushrooms
1 brick tempeh
1 clove of garlic
salt & pepper to taste
