Mighty Kale Salad

Kale is one of the most nutrient-rich foods on the planet on it’s own, but when you combine this superfood with powerhouse ingredients like goji berries, pecans, and avocado, you’ve got a salad that blows the lid off of the ORAC scale. Try this recipe using pretty purple dino kale or green kale – or maybe a little of both. It’s nutritious, delicious, beautiful, and hearty enough to enjoy as a meal in itself.


  • 1 bunch organic dino or green kale, stems removed and chopped
  • 2 tablespoons fresh lemon juice
  • 1/2 cup green onions, tops removed and chopped
  • 1/2 cup parsley, stems removed and chopped
  • 1/2 cup dried goji berries, soaked for an hour and then drained
  • 1/2 cup pecans, chopped
  • 1/2 organic tomato, top removed and chopped
  • 1/2 avocado, peeled, pitted, and cubed
  • 1/2 cup organic apple cider vinegar
  • 1/2 cup mango or papaya, peeled, seeded, and pureed
  • Pinch of sea salt


  1. Place kale in a large bowl and massage with lemon juice for about 1 minute, or until lemon juice is well incorporated into kale leaves.
  2. Mix in onions, parsley, goji berries, pecans, and tomato.
  3. Top salad with cubed avocado.
  4. To make dressing, whisk vinegar, pureed mango or papaya, and sea salt.  Drizzle over salad, as desired.
  5. Serve in individual, shallow bowls or on salad plates.
